Cheese noodles aka Bayrische Käsespätzle

1. Pasta

  • 2 Eggs
  • 100 ml Water
  • 200 g Wheat flour
  • pinch of salt

2. Sauce

  • 200 ml Whipped cream
  • 150 g Allgäuer mountain cheese
  • pinch of Salt
  • pinch of Pepper
  • pinch of Nutmeg

3. Topping

  • 300 g Onion


1. Pasta/Spätzle

  • Mix the flour, water, salt and eggs and stir it until it throws bubbles.
    Cook a lot of water in a big pot. Put some tablespoon of dough on plate. Then get a knife and start scraping tiny bits of dough in the hot water. Dip the knife every now and then in the hot water. When the Pasta swims to the top, skim of with the ladle.

2. Sauce.

  • Bring the whipped cream to heat in a pot. Grate the cheese and ad it in the pot. Let it melt while stirring continuously. Let thicken up on hight heat, then season with salt, pepper and nutmeg.

3. Topping

  • Cut the onions in fine slices. Heat some Butter in a pan and let the onions sear on low heat, until they get brown and soft.
    Mix the pasta into the sauce. Plate it in a bowl and garnish with the caramelized onions. Enjoy!
